Indian-Spiced Cauliflower & Peas (Gobi Mattar)

1 small cauliflower, cut up into florets
1 cup frozen peas
2 tomatoes, chopped
1 tsp chili powder
2 tsp cumin powder
1 tsp coriander powder
1/2-1 tsp red pepper flakes
Salt to taste
¼ tsp turmeric
½ tsp garam masala
2 tsp chopped cilantro
2-3 tbsp oil

Heat a large frying pan with oil over medium heat and add chili powder, coriander powder, cumin, tumeric, garam masala and red pepper flakes. Fry for a couple of minutes. Add the cauliflower florets and toss in the spice mixture and saute for about 8 minutes. Add the peas and tomatoes to the pan, cover and simmer for about 10 minutes, stirring occasionally.

Garnish with the chopped cilantro. The more the better :)
