Topping:
2/3 cup oats
1/4 cup packed brown sugar
1 tsp cinnamon
2 tbsp margarine, melted
Batter:
1 1/2 cups flour
1 cup oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 cup unsweetened applesauce
1/2 cup milk
1/2 cup butternut squash puree or carrot puree*
1/2 cup packed brown sugar
1/4 cup vegetable oil
1 egg
Preheat oven to 400 degrees F, and grease muffin tins.
To make the batter, combine the flour, oats, baking powder, baking soda, and cinnamon in a bowl. In another bowl combine applesauce, milk, squash or carrot puree, sugar, oil and egg. Add the flour mixture and stir only until moistened. Make the streusel topping in another bowl by combining all topping ingredients together.
Pour the muffin batter into greased muffin tin and divide the streusel equally over the top of the muffins. Bake for 18-20 minutes or until a toothpick comes out clean, and cool on a rack.
